Brewpub Manager Tacoma, WA
Fish Brewing Company, the producer of Fish Tale Ales, Leavenworth Biers, and Spire Mountain Ciders is one of Washington's premier craft brewery/cidery with its production facility and pub in Olympia, WA, is seeking a unique individual with experience and knowledge to manage its newest pub at Point Ruston in Tacoma, WA scheduled to open in August 2017. The Pub Manager must have previous experience managing a high paced, quality Gastro pub or Restaurant and must have passion for the craft beer industry and the ability to inspire others. The position reports directly to the Retail Supervisor and is responsible for management and oversight of all pub operations, The manager must be willing to work on the floor during lunch and dinner peak hours including weekends. The team consists of two assistant managers, wait and kitchen staff, and personnel from the marketing department.

Specific duties include:
- Profit and Loss Statement responsibility for the unit. This includes meeting financial objectives by: assisting in the forecasting and preparation of an annual budget, analyzing variances and initiating corrective actions, balance daily receipts and deposits, and complete banking requirements.
- Manage restaurant human resource objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling, and disciplining employees; communicate job expectations; plan, monitor, and review job contributions; plan and review compensation actions; and enforce policies and procedures.
- Achieve restaurant operational objectives by contributing information and recommendations to strategic planning and review; prepare and complete action plans; implement production, productivity, quality, and customer-service standards; resolve problems; identify trends; determine system improvements; and implement change. Work on the floor during peak lunch and dinner hours.
- Manage Cash Register systems by informing District Manager of required changes to item and pricing changes; update employee access; produce back of the house reports, analyze reports, and take corrective action as required.
- Assists District Manager with the planning, preparation, and maintenance of printed and electronic menus. Develop and advertise daily and weekly specials.
- Control costs by reviewing portion control and quantities of preparation; minimize waste all while ensuring high quality of preparation.
- Conform to regulations of the all government agencies including the Washington State Liquor and Cannabis Board.
- Maximize bar profitability through portion control with the use of software monitoring programs; monitor accuracy of charges and develop and advertising drink specials.
- Manage the restaurant's loyalty program including its mug club by soliciting members, manage events and promotions for members, and create new ideas to promote them. Educate staff how to sell these programs.
- Promote, manage and execute special events including quarterly feature dinners, catering opportunities and private events.
- Work with the District Manager and the marketing department; promote the restaurant by suggesting external and internal print advertising; post on social media daily, invite food editors to review the restaurant; contact local, regional, and national magazines with feature ideas; and encourage local businesses to hold social events at the restaurant.
- Maintain safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; comply with legal regulations; secure revenues; develop and implementing disaster plans; maintain security and all mechanical systems; maintaining parking lot and walkways and all equipment. Monitor security system on a frequent basis.
- Maintain ambiance by controlling lighting, background music, linen service, glassware, dinnerware, and utensil quality and placement; monitor food presentation and service; utilize and monitor televisions use effectively while the establishment is open for business.
- Update job knowledge by participating in educational opportunities; read professional publications; maintain personal networks; participate in professional organizations.
- Enhance department and organization reputation by accepting ownership for accomplishing new and different requests; explore opportunities to add value to job accomplishments.
Position Requirements:
EDUCATION/CERTIFICATION:
- Four-year college degree preferably in a business area or restaurant management.
REQUIRED KNOWLEDGE & EXPERIENCE:
- Five years of restaurant experience with two years of progressive advancement in management positions.
- Strong skills in reviewing and understanding financial statements with the ability to drive the bottom line.
- Strong computer skills including knowledge of all Microsoft Office Suite programs and cash register systems. Knowledge of revel or Micros POS systems a plus.
- Great communication skills both verbally and written.
- Experience, knowledge and relationships with food and beverage vendors.
- Marketing experience required to expand marketplace and gain customer share locally
- Sound technical knowledge of cooking raw materials and components
- Experience in motivating staff to achieve goals; ability to develop and manage productive relationships with staff and peers locally and remotely
- Scheduling of employees for both back of house and front of house
