Location: Arlington, Washington

Be part of developing your own confections, chocolates, and ingredients “with the over site of a well-established molecular chef and flavonoid expert”. Bring the world of chocolate artistry to Cannabis.

You will have the support structure to create ever developing tiers of new products with the support of an amazing team of chefs, souse chefs, and assistants. We will create and develop ever growing equipment and systems to make the transition into main stream production easy and effortless as we grow.

Requirements:

  • Minimum requirement of an Associate Degree from a culinary program or a certificate from a specialized institution, or 3-5 years of experience in related field.
  • Bachelor’s Degree or Master’s Degree in Culinary Science or Culinary Studies is preferred.
  • You need to be passionate about cooking to enjoy your job and to last in this business.
  • You need to be able to handle pressure to create large quantities of high quality confections on a consistent basis.
  • The routine process of making hundreds or thousands of the same pieces can be mentally challenging, so we need someone who can stay focused and pay attention to detail, measurements, and times.
  • You also will spend many hours working on your feet, moving equipment and supplies, which means you need physical strength and endurance and the ability to lift 25lbs.
  • You must have patience and good hygiene.
  • You must know the basic tempering for milk, dark and white chocolate (Tempering machines and Marble Tables are on site).
  • You must be trustworthy, a person known for personal integrity and honesty.
  • You must be detail oriented, a person who pays close attention to all the little details!
  • You must be reliable, a person who can always be counted on to do a good job and be ON TIME.

Job Duties and Responsibilities:

  • Work alongside a Master Level Cannabis Chef who will guide you in your formulation and work side by side with you to create masterpieces within their own right.
  • You will replicate recipes for production once an established process has been agreed upon.
  • Prepare food products using ingredients and recipes to the letter and number.
  • Utilize equipment in large-scale and small-scale operations to mold shapes and hand-held devices to add detail.
  • Temper, dip, decorate and mold chocolate. (Lacquering, painting, 24ct Gold work, and glazing will have instruction.)
  • Handle the pressure and seemingly endless repetition.
  • Understand the chemistry of chocolate flavors and textures for each recipe.
  • Be able to admit when you have made a mistake, we all make them.
  • Understand the chemistry of hard candy and soft candy flavors and textures for each recipe. (Will train for the right candidate.)
  • Understand the confectionery formulae based on ganache, sugar syrup and fondant.
  • Abide by the strict guidelines, rules protocol and schedule of the Kitchen, The L.C.B., Department of Health, Department of Agriculture, and the Chef.

Starting salary for this position is DOE to start at $35,000-$40,000 per year.
