Assistant Concessions Manager - CenturyLink Field (Seattle, WA)
Reports to: Concessions Manager
Position Concept: Responsible for assisting in leading a guest service oriented and efficient workforce, equipment management, event set up and distribution operation and alcohol compliance at CenturyLink Field, Event Center, and WaMu Theater.Collaborate with the Concessions Manager in the planning and execution of food and beverage service and event rentals at CenturyLink Field, including the development of an overall vision, strategy, and business plan, with a focus on sustainability, affordability, and nutrition. Provide leadership to execute world class food and beverage experiences that exceed guest expectations.
Essential Duties and Responsibilities include the following. Other duties may be assigned:
- Lead and provide guidance to supervisors and hourly employees according to our Leadership Principles and Standards to include developing, counseling and mentoring staff and direct reports. Evaluate performance on an ongoing basis, and provide appropriate feedback to improve overall performance.
- Coordinate and supervise activities of employees, supervisors and volunteer group members to ensure that customer service and production are executed at a high level for all events.
- Collaborate with Culinary team to provide training tools and production sheets for every location.
- Responsible for creating POS and Menu items in ByPass and ensuring team member have been trained.
- Verify sales reporting and cash handling and prepare various cost and operational reports as required. Examples would be stand over shorts and cashier over shorts and providing information to Concessions Manager and Finance team.
- Ensure adequate levels of product by continual supervision of stock levels based on sales projections for different event types and attendance levels.
- Completing a daily walk through of concessions locations during load days, event days and post event clean up days to ensure stands teams have completed preparations.
- Prepare various sales and operational reports as required; analyze product usage.
- Ensure compliance with Washington State Health Department, and the Washington State Liquor Control and Cannabis regulations.
- Create monthly supervisor schedule based on volume of business.
- Create event plans and detailed work tasks and delegate to supervisors and support staff to prepare and execute events.
- Ensure compliance with Federal, State and local regulations regarding payroll, employment and EEOC
- Collaborate with Culinary team on new menu items and ensure staff and equipment is in place to execute.
- Partner with FGH and FGI managers on event management. Coordinate detail on special setup’s, staffing levels, menus and client requests.
- Supports and communicates Company initiatives.
Qualified candidates must have:
- Minimum of 2-3 years of management experience in a high volume foodservice industry.
- Must have excellent written and oral communication skills and have the ability to multi-task.
- Ability to work weekends, evenings and holidays as required by the event schedule.
- Must be able to assign tasks and manage a supervisor staff of 25 and front line associates of 600.
- Familiar with standard food service equipment.
- Strong communication skills and math aptitude is required.
- Proficiency in Microsoft Word, Excel, and Powerpoint, ByPass and inventory systems.
- Knowledge of accounting policy and procedures and POS systems is preferred.
- Leadership ability to direct and motivate staff towards company goals.
- Mentality to maintain a positive work climate where the Concessions Department is motivated and energized.
